Easy Skillet Chicken Fajitas

Ingredients

  • 1-pound boneless skinless chicken breasts (or 2 large chicken breasts), cut into ½ inch strips
  • 1 1.12 oz packet divided fajita seasoning (McCormick Fajita Seasoning Mix recommended)
  • 2 Tablespoons canola or vegetable oil
  • 3 bell peppers, sliced thin (different colors recommended)
  • 1 onion, sliced thin
  • 1 tablespoon butter
  • 1 lime

Instructions

  1. Place chicken strips in bowl and toss with ½ packet of fajita seasoning. Let sit.

  2. Meanwhile, heat oil in large cast iron skillet over medium-high heat. Add sliced bell peppers and stir until peppers start to soften (about 5 minutes). Add sliced onions with bell peppers and stir until vegetables are mixed. Stirring frequently, cook until vegetables are soft and have a little bit of char (about 10 minutes). Remove vegetables from pan and set aside.

  3. In same skillet over medium-high heat, melt butter and add chicken strips making sure not to overcrowd and stir frequently until cooked through (internal temperature should be 165°F).

  4. Add vegetables to cooked chicken, remainder of fajita seasoning, and stir just until incorporated. Finish by squeezing the juice of half a lime over the fajita. Serve with lime wedges made from the other half of the lime and any recommended sides.

Notes

Recommended sides: Rice, tortillas, sour cream, guacamole, cheese, and Pico de Gallo
