Bacon and Tots Breakfast Burrito (Picture shown of filling before being rolled into a burrito.)
A kid friendly breakfast you can freeze and reheat for a quick on the go breakfast. I love this recipe because most of the work is done by the oven!
Ingredients
- 4 slices thick-cut bacon
- 20 frozen tator tots
- 8 eggs
- 2 tablespoons milk
- Salt and pepper
- 1 tablespoon butter
- 1/2 cup shredded melting cheese (I recommend cheddar or Mexican blend)
- 4 tortillas
- Salsa or hot sauce (optional)
Instructions
1. Line 2 small baking sheets with foil for easy cleanup. Place bacon strips in a row on one baking sheet and tots on second baking sheet. lace in 400-degree F preheated oven. Bake until desired crispiness of bacon (about 20 minutes).
2. While the bacon and tots are baking, in bowl, whisk eggs, milk, salt, and pepper. Heat butter in a non-stick skillet over medium heat, when melted, add egg mixture. Stir eggs with rubber spatula until eggs are scrambled and no longer runny. Remove from heat.
3. Time to assemble! Heat tortillas just till warm and pliable. Place a ¼ portion of each filling in center of tortilla. Fold one side of tortilla over toppings. Then fold in left and right sides of tortilla in and roll up!
